hmm. sprouted lentil bread, eh? that sounds really interesting. i wonder how it would work with my normal smooth sourdough. you usually have bits of stuff in your bread, so sprouts seem like an interesting different one.
i made my inaugural batch of sourdough bread without salt or sugar, as there was none in the house. i think it turns out the maple syrup is enough sweetness, but some salt is necessary for flavor.
it's kind of interesting to have a recipe i'm very familiar with and be forced to make substitutions or omissions.
