I usually make my own lunches -- yesterday I had a whole-wheat pita pocket with a little hummus and stuffed with salad. One of my fav lunches lately is a sort of taco salad, with vegetarian/low fat refried beans on salad. Mmm! I'm also trying a Trader Joe's style of instant soups, like ramen and rice noodles and stuff. So far it's about 50/50, and I find that like normal ramen I have to only use about half of the package of seasoning, otherwise it gets chalky.
One of my fav vegetarian stuffs are the Morning Star Farms foods. Can't say much for their imitation meats, but they do a great sort of spinach and artichoke nuggets (like chicken nuggets) that microwave up in minutes.

Also, animal protein is very high quality. You'd have to be careful to replace it in your diet, especially if you keep up with the running and such.
I think the trick to good lunches is to cook for yourself ahead of time. Leftovers make great lunch. Asian cuisines are fairly vegetarian friendly. Lately I've been baking my own bread, and eating it with soup (pacific organic box soups, and similar) and whole fruit, which happens to be vegetarian. And delicious.
