Last night, I made Marne's jalapeno poppers, with a little help from Sarah & Hannah. I fried sausage and onions together, then combined that with some cream cheese and parmesan cheese, mixing them all up together. A jalapeno pepper is rated at between 2,500 and 8,000 Scoville units. I think the green sauce I bring sometimes is rated at 9,000 Scoville units. Don't ever get it on your hands. ;)

It's really no fun. They also have a super version of pepper spray that's a higher concentration than that. Our SWAT guys carry it.

I'd rather get tased multiple times than ever get pepper sprayed again. It continues for days.

The darker the jalapenos, or the longer they've stayed on the vine, the more spicy, of course. The red ones are pretty darn hot. When I cut up the red jalapenos, or cayenne, or habanero, I tend to use gloves. The worst part for me is that I get it under my fingernails and it stays there a long time!
