I usually describe my musical tastes in that fashion, but it's not exactly true. Most current rap is gangster rap, so I avoid listening to it on the radio, but I will regularly listen to a few hip hop artists. I don't like most things under the hip hop/r&b genre, so I will mention that I generally dislike it without going into detail when there are some songs and artists that I like. Country is mostly the musical tone; I'm not a fan of slow songs, twangy songs, or songs with many religious references, and most country songs have at least one of those features. There are still a few songs I like, but much fewer than in the rap genre

but for the longest time I still said "...everything except a lot of rap and country."
Now I say "Goth rock. Well, all sorts of stuff, but mostly goth rock." because I always felt that saying "everything" was sort of a cop out, and most people want to know what you REALLY like, not just what you casually listen to.
Or alternately "Every thing except mainstream music from the last ten years."
