Seems like you've got things pretty much figured out! With regards to the ghouls, what about... say... having them be in a zoo to represent 20th century America, and the apes are the ones pointing and laughing as the ghouls go through their routine? Maybe the smart ghouls who are the 'stars' view it as basically a sinecure that keeps them from being brutally killed by the people who live outside, and the feral ghouls just go along with the regular "lunchtime feeding frenzy at the deli" kind of thing.

Sounds good! Maybe the original exhibit was 'How Space Travel Has Helped Humanity Work/Live/Grow' and highlighted various research that has found its way into 'modern' civilization. Of course those food bars you mentioned would be a leading item... Maybe there's a small factory exhibit for them, run by ghouls.
