Cooking vs. Assembly

 I know I can buy perfectly nice pizza from the pizzeria around the corner. It is less than a mile away by foot. I just like my own pizza. I like being able to control the ingredient list and put whatever is in the fridge on the pizza.  Tonight was buffalo chicken sausage with asparagus and broccoli, stuffed crust broccoli and asparagus and half

but if I do that I feel like I'm assembling dinner and not cooking. For me cooking involves prep. Chopping onions, slicing stuff up.

That's funny, because top chefs typically don't do their own prep. They have assistants and prep cooks for this sort of thing... in fact very large restaurants may even have a whole separate prep kitchen.
