OMG, my last DW post was for last new year's day. /o\ And it's not like I posted much to tumblr either, but I did post more than I thought. I was more pissed off at Teen Wolf than I realised, apparently. But I also still find this as funny and awful as I did when I put it together ( Read more... )

Best wishes for the new year! Side note, I was super excited to see you make komboucha! That's been a relatively recent discovery of mine as well and I definitely enjoy it.

I'm only a couple of batches in - I've got the process down but not the timing. It's very hot here so it brews fast and I keep forgetting to check on it until the weekend. My sister described mine as "halfway between apple cider and apple cider vinegar". I love vinegary things so I don't mind when it goes too far, but it would be nice to make some that other people can drink. :P

My strategy for making it sweeter (and more interesting) is to do a secondary fermentation with some fruit juice. This adds flavor (and you can vary the flavor with the type of juice) and it carbonates it a little bit. I find that adds to the general appeal. I'm not much for vinegar myself so I find that more to my taste. So far I especially like a secondary fermentation with apple juice, grape juice, or mango juice, though I've read that any non-citrus juice should work. I want to try it with ginger, too, I imagine that would be good and sort of like ginger ale.
