Dinner post

(Don't worry, I won't normally do food posting this often. I've just been feeling very kitcheny this weekend.)

Dinner: quinoa with roasted pumpkin, baby squash, mushroom, tomato, spinach, cashews and a soy and maple syrup dressing. Definite win.

I think it's more that I cook for one now and so if I make something yummy, I don't have any validation!

I'm glad! (Possibly I shouldn't be?) But I'm so happy to be trying new things and finding things that work for me, especially without dairy.

No recipe really - bits and pieces from everywhere. I googled instructions on how to cook the quinoa then cooked up the vegies in separate batches (including onion and garlic) and then the dressing, which was inspired by 101cookbooks, was deglazing the pan with equal parts soy sauce, maple syrup and rice vinegar, plus some ginger, plus some water and reducing it down. Then it was all just mixed up in a big serving bowl.

I got the quinoa at a health food store and I googled instructions - soaked, rinsed, cook with lid on. But I probably didn't follow the instructions well enough because it seemed to me to take at least 25 minutes to cook. Apparently you can use a rice cooker so I feel the need more than ever.
