If you are serious about doing this, you would have a bigger market following if you could do it gluten and casein free. And if you are willing to really get creative, experiment using things like agave or rice syrup in the creation. While everyone knows about the evils of high fructose corn syrup, little is being said about the inclusion of beet sugar ( from genetically modified beets) into that which can legally be labeled as sugar( which everyone assumes is pure cane sugar). For a growing segment of the population, the inclusion of beet sugar into cane sugar is very problematic, and so they search high and low for any product made with agave or rice syrup. I do not know if these will preform the same as sugar in canning, but they hold up well to heat without turning bitter.

Just for your own info in the consideration, in order to be gluten free it would have to be made using equipment that has never touched anything containing gluten ( wheat, rye, oats,corn and so forth)
