Let's say I had a hypothetical drink with someone in whom I am hypothetically interested. The hypothetical conversation seemed to be going well and she appeared to be enjoying herself. And then after about a half an hour she announced, "I would normally stay for another beer but I promised my roommate that I would watch a Mandy Moore movie with her

I think she was being honest and I think you should call her up for another beer or two.
Maybe bring a mandy moore DVD to watch on your laptop?
