Cooking with Jurrell LOCAL KINE GRINDS : Episode 1 Chicken Katsu



Last week I noticed my current job is killing my family and social life. I haven't made any new friends in a long ass time (up until last saturday) and I haven't ate dinner with my family in ages. This 4pm-11pm thing is retarding my life.

Any who, that's beside the point. Tuesday is my only week day off, so I decided to cook a banging ass Hawaiian dish...by myself :(. So I went to the store and got some panko bread crumbs and a wild goose chase for some Tonkatsu sauce. I went to 4 different grocery stores. They have 75 different types of soy sauce, but they didn't have a single chiken cutlet sauce. Lame! So I just ended up buying some white bbq sauce (just how I like my womennz, white and saucey).

*Deep breath in*

Ok, here we go.

What you need:
* 4 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness
* salt and pepper to taste
* 2 tablespoons all-purpose flour
* 1 egg, beaten
* 1 cup panko bread crumbs
* 1 cup oil for frying, or as needed

1: Put the Flour, beaten egg, and bread crumbs in separate bowls.


2: Grab one of the chicken breasts, feel it up a little. Don't be shy now.


3: Now, it's about an inch thick in its current form, so beat the shit out of it until it's about a 1/4 inch thick. Then cut it in half, or thirds. Whatever floats your boat.


Rinse and repeat


and 4: Repeat steps one through 3. Actually don't, that was a Brian McKnight song.
Flour up, shake off the excess.


5. Dip the flour'd breast into the egg bowl.

6. Dip the flour'd and egg breast into the panko bread crumbs.


7. Now here's the fun part. Warm up a pan of cooking oil about a 1/4 inch deep and cook each side for about 4 or 5 minutes.


Rinse & Repeat


8. Profit.


Now you are unofficially eating hawaii's second or third most popular dish. Behind spam of course.

Now this meal does have the itis. I nodded off after eating it and when I woke up 3 hours later, my family ate the rest of the katsu. Oh well.
