lol i feel you on the thai tea- i am also obsessed with getting the perfect reproduction at home.... i tried a powder that i got from whole foods, but when i first used it it didn't taste right at all, going by the recipe on the box. so i shook it up a little and improvised and threw in a spoon of sugar and it tastes *almost* but not quite restaurant quality. there's a brand online that makes a syrup to which you add water, ice, and milk, called curry simple (they make curry pastes too) and that is supposed to be great but i haven't ordered any yet. but of course, you're a cook so you wanna do it the hard way! :p let me know how it turns out and tell me what you did!
i ended up boiling the loose tea leaves over the stove for 20 minutes, 2 tbsp. per cup of water. Then i added sugar until i thought it was sweet enough, chilled it in the fridge and poured half and half over it. it turned out pretty good, but it didn't turn that trademark thai tea orange. :-(
I think that tea is just a loose leaf green tea. We've had oolong, too. I have no idea what brand it is, but I'll hook you up with your fix when I get back, promise! <3 Also, one step closer to running away from school (aka graduating early) and opening that bakery. ohhhh man. When we hang out there is a lot to catch up on.
