Dill Butter Recipe

-softened butter (leave it out on the counter, DON'T microwave or melt it!)

-1 tablespoon chopped fresh dill for each 1/4 cup of butter

-1 tablespoon chopped fresh chives or scallions for each 1/4 cup of butter

-1 tablespoon lemon juice for each 1/4 cup butter

That's even easier than this...

Instead of using water, use coconut milk (substitute volume for volume). You'll get better flavor if you don't use the low-fat stuff. If you want more flavor, toss in about 1/3 cup of shredded coconut for every cup of rice. If you use low-fat coconut milk you'll definitely want to add shredded coconut to augment the flavor.

Just watch it carefully because you don't want it to scorch...it's a bit more sensitive to scorching than plain rice.

Also: use the kind of rice you get from Asian food stores if you can...you'll be a better texture.

also...I usually toss in a pinch of salt, maybe 1/2 tsp? forgot to add that because I always add a touch of salt to rice.
