So we're getting ready to rid te house of bread products and whatnot. Does ramen count? I mean is it still kosher to eat during passover?

yes, ramen counts. noodles are made from wheat, and therefore may not be eaten for the duration of Pesach.

no. unless your sephardic and have always eaten rice during pesach. Whatever traditions you have established cannnnot be changed, and eating chometz on passover is akin to a Catholic eating meat on Friday.
