I had a great evening with friends, food and fun (games) yesterday. And I was asked for the recipe of the salad I made for the meeting. It's from
Luisa Francias magic cookbook.
500g white beans
1 twig of rosemary
1 onion
200g dried tomatos
salt
pepper
olive oil
balsamico vinegar
nasturtium (I have a hard time getting this, I use garden cress instead)
If you use dry beans soak them in water over night and then cook them with the rosemary. I sometimes use pre-cooked ones and then add a bit of fresh chopped rosemary to the salad itsef. Chop the onions and tomatos. Mix with the beans and the cress. Add salt, peeper, oil and balsamico as you like. I recommend using only a bit, let the salad rest for about an hour and then taste it and add some more spices/oil/vinegar if needed. Be careful with the salt because many dried tomatos are already salted. Enjoy :-)
