It's been a lovely, lazy weekend. Yesterday we spent most of the day in bed with coffee and a dozen or so plant and seed catalogs, planning the vegetable garden and additions to the perennial borders. This morning I made my special waffles, and then we went outside and worked in the yard. Deb's off tomorrow too, so we have even more time!
Waffles are delicious and really easy to make. I "cheat" and use the Bisquick recipe: 2 cups Bisquick, 1 1/3 cups milk, 2 tablespoons vegetable oil. The difference is that I use 2 eggs, separated. The egg whites I beat until they're almost stiff. I beat the egg yolks, oil, and milk together in a big measuring cup, pour the mixture into the Bisquick in a big mixing bowl, then mix the batter with the beater until it's smooth. Finally, with a rubber spatula, I fold in the two beaten egg whites. That's it. The entire operation takes three or four minutes, and then you're ready to bake them. Butter, warm syrup, and fruit--that's breakfast for a slow weekend morning. Sometimes we fry up some bacon or sausage to go with them but this morning it was just waffles, fruit, and coffee. Yum!
