I am experimenting with canning. Today I went out and bought a canning rack and some jars. I made "sweet soup" which is one of my great-grandmother's recipes. Its sort of like a sauce made with rhubarb, raspberries, cherries, currants, prunes, and pearl tapioca. Its delicious. We eat it over ice cream. Its Danish. i made buttermilk pie yesterday but forgot to add butter to the filling,so it turned out ver custardy,but very good. you don't need a pressure cooker for peaches or tomatoes,just a water bath.the tomatoes being grown today are pretty low in acid so you will need to add a little lemon. qts need about 25 min.

What about peaches? Do I have to add acid for those as well?

I want to make and jar pasta sauce. And my own sourkraut, but that one sounds like a pain in the ass.
