I think, as with any talent, a certian cooking intutition is born within a person that has to be tempered. It surprised the hell out of me when I moved out of my parents house, cooked my first meal, and it came out pretty good. I didn't follow a recipie or anything ... I just went by what I thought would work.

But, practise is definitely part of it. I'll read a recipie the first time I cook something, and then I'll never pick it up again. XD I go by taste testing ... what worked this time, what to do next time, etc. Granted, I cook very simple meals a lot of the time.
