they seem pretty fancy to me! whhat do you mean by "dock the center area"?

Take a fork, and stab it into the pastry a few times. It keeps the buttoms from puffing up, since it gives the steam a place to go. They actually make a fancy tool for doing this, but I can't imagine a home cook needing one -- I mean, most of us already /have/ forks. XD
