Kale braised for 30 minutes should still hold up pretty well, and add a different but not unpleasant texture.

Ooh, I should try that with brown rice. It looks fabulous.

Toss in some baby spinach at the end, just long enough for it to wilt?

Chard might work, as well as throwing in some fennel. Of course, that requires liking fennel, which not everyone does.

So is it a if-you-love-grains-you'll-love-this sort of dish, or this-might-convert-grain-haters sort of dish? Because it looks really interesting, but big bowls of chewy grain-based things usually make me sad, but I want to try to eat more.

I'm particularly fond of farro, which is chewy without being the slightest bit mushy, if you know what I mean. It also tastes more nutty than, say, bulgar or barley or quinoa or rice. But if you categorically dislike all grains, then this probably isn't the dish for you.

I'd say spinach or chard would be awesome. Chopped steamed broccoli would also rock. Maybe some asparagus.
