Freezer Meals

I'm preparing to make some meals to freeze for after the baby comes.  So I'm in need of easy-to-freeze recipes!  I have a few casseroles that I think will work well, but I'd appreciate any recipes you guys have ( Read more... )

Red beans freeze extremely well, plus they're high in iron - great for new moms! And cheap, too. I can dig up my recipe, if you want it.

Ooh, I would really appreciate it! I love red beans and rice, but I have NO CLUE how to make it.

It is soooo easy. I always bring it to new moms after they've had a baby. Just took it over to a friend Sunday, in fact!

Here is my new favorite freezer meal. It takes me about 25 minutes to make 3 freezer lasagnas and we can eat each one of them for two days! Here is the lasagna recipe. The only part I need clarification on is this: "(about the size I brought you)"

I assume that the recipe was originally typed up for someone else. What size pans should I use?

Heh, yes. It is the smaller of the two kinds of pyrex dishes. About 10 x 6 or anything with that approximate interior area.

(I have no idea where the name came from)

2 cups cooked egg noodles
1 Tablespoon chili powder
1 pound ground beef
1 cup grated cheese
1 can tomato soup (condensed)
1 can corn drained
1 small jar pimentos (for color)
1 cup water
Sliced American cheese or Velveeta
onion powder
garlic powder
salt/pepper

Cook beef with chili powder and drain. Add noodles, soup, and water. Season to taste with spices above (or others if you like). Add corn and cheese. Turn into greased 13 x 9 inch pan. Cover with cheese American cheese and bake for 20 min at 350.

It is super simple and I really like to eat it. We have it on our menu for this week. It really isn't exciting, but it would be an great dish to freeze.
