Pumpkin Palooza!

In the last 18 hours, I have made:

•  2 batches of pumpkin wine
• 12 chocolate pumpkin muffins
• Pumpkin coffee

I still have a lot of leftover pumpkin, both canned and in fresh cute pumpkin form.  Any suggestions?

As it happens, I just found a recipe for pumpkin pasties that sounds delicious.

I also like making oatmeal with canned pumpkin in for breakfast, but that doesn't use up much.

Those pasties look really really good. I imagine the same basic recipe would be a good jumping off point for experimenting. Mmmm.

How does the pumpkin oatmeal work?

I literally just make oatmeal and stir in a couple of spoonfuls of pumpkin, a little maple syrup (or the sweetener of your choice), and some cinnamon and nutmeg. I've been told it's weird, but I think it's pretty tasty?
