Personally, I'm a fan of New Zealand mussels, but it's been a while, so I may not be able to tell the difference anymore. Mussels do vary in flavor from region to region I believe. I find them tasty. If you like oysters, they're similar in texture in my opinion. I would think they'd be a bit easier to cook then oysters, their shells seem softer. That's my personal knowledge. Hope it helps.
