Yes you can, particularly if you've had a missing/blind eye for some time (and have therefore become quite accustomed to making up for the deficiency with extra head-turning, etc.) and you pass standard vision tests.
My grandfather has had a glass eye since my mother was little, and has never had any problems with the DMV. In fact, he was a pilot for quite a long time.
I've driven with only one contact in before and managed not to kill anyone. It was definitely more difficult than driving with two eyes. When I had to retake the eye test at the dmv one of my contacts was too cloudy and I couldn't read the chart. The clerk considered not giving my liscence but gave it to me anyway.
Kat are you thinking about having that eye removal surgery you were talking about? I know it would be cool to have a disco ball for a left eye, but really now. You hooked yourself a great guy, you don't have to go to such great lengths to meet people. We like you just the way you are. err, wait. Mybe you are trying to get us not to like you. That would suck.

Shoot a friend of mine's mom was legally blind and she had a license for a number of years before they finally didn't let her renew by mail anymore...
