I guess I see that preacher's point. There isn't some plateau or point we reach as Christians where "we're there" in terms of maturity. It's always a work in progress. But to say there aren't any mature Christians seems to be missing the author's point in Hebrews 5:12-6:3. It seems to me that the I'll-never-be-mature attitude is pervasive and leads to a lot of spoon and breast-feeding (if you will) of the church, which promotes zero growth. And I also think there's a lot of confusion behind the word "maturity." No two people would define it the same, I'll bet.
But you're right. There's always more snow to be plowed, as it were.
