This is the only decent way I've found to cook polenta in an interesting and tasty way

The gloop i made when I tried to do polenta from seeds was awful... ready made in a packet I cut it into slices and fried it in butter and that was good.

I still have the packet of dried stuff, this might inspire me to play with it again :)

I presume you oil the tray for the fries ?

I put them on baking paper, but you could roast them in a tray like potatoes.

We're all fine. Lots of stuff to get done before the twins arrive though.
