Should I aim to get glass demijohns or are plastic ones fine? I don't want to spend more than I have to but I don't want to end up with crap either

Glass.
Or do you want lovely plasticizers to leach into your wine?
(Plastic is probably okay for short-term use, but any decent wine is going to want at least six months, and possibly as much as ten years (in the case of mead), in the demijohn.)

I;ve always found them fine, but s'up to you. If you charity shop trawl you can usually find glass ones pretty cheap :P
