I can't believe the last time I did one of these was 2009...

Anyway... finally trying to start up again -

Baked Salmon with Black Bean Salsa & Quick Corn Saute

This was awhile ago but I remember liking it and would make it again. Next time I'd probably also add more corn just because I love corn.



Spanish Pork with Redskins

The potatoes were nothing special, I didn't really follow them to the recipe, but the pork part I liked a lot. It looks better than it does in the picture. I'd definitely make this again. I just remembered that I used ground beef for this instead of pork, but the recipe had called for pork. The stuff in the , beef, includes onions, corn, zucchini, red bell pepper and tomato. The white stuff on top is crumbled goat cheese, it would melt on top of the meat and added good interesting flavor to it. The recipe had originally called for peas, but I didn't use those since I don't like peas.



Country-Fried Steak with Mushroom Gravy

This is supposed to be a healthier lighter version of the classic country fried steak. The picture doesn't look that good, but I actually really liked it. The gravy has a lot of shitake mushrooms in it, which I love.



Creole Dirty Rice with Turkey Sausage & Beans

Ok this is another bad picture, it looks like poo or barf or something, but it actually wasn't bad. I don't know if I like it enough to make it again though. I need to play with the settings on my camera, or spend more time in post editing to make this stuff look better, anyway..
This dish looks more colorful in the magazine images, either I overcooked some things or left out/substituted some ingredients, I forgot.



Banana Bread

Just some healthier banana bread, the recipe is from an old issue of Oxygen I tore out awhile ago and have in a folder with other magazine recipe tear outs. I don't think the bananas were mashed enough, you can even see the chunks, but I don't mind. Whenever I make this, I just eat it for breakfast or a snack until it's gone.
