I'm working on our weekly menu and am bored. So I am asking all of you to help me out. What are your go to meals for your family. If you could share a recipe that would be great and very helpful.
tuna casserole, black bean chili, cheater chicken (frozen chicken + some sort of marinade, bake, serve with rice; called cheater chicken because it looks & tastes complicated but it isn't), home-made pizza, thai curry soup with tofu
I also make homemade pizza, hamburgers, stir fry with tofu since Claire will eat tofu, and chicken breasts sauteed and then a pan sauce. Easy but good pan sauces are:
Red wine Dijon Sauce- 1/4 cup red wine, 1/4 cup chicken broth, 1 teaspoon dijon mustard, cook down until reduced by half (or more if you like it thicker) and then melt in a tablespoon of butter.
Balsamic Reduction- Same numbers as above, but use balsamic vinegar and leave out the must. Add a little honey if you like sweet sauces.

Mango Chutney Curry Sauce- 1 tbsp. mango chutney, 1 tsp. curry powder, 1 tsp. cider vinegar (any kind works, though) and 1/4 cup chicken broth. Reduce, add butter, yum!
