Well, I completely lost track of these days! I had a house full of guests and wasn't too concerned with writing down what I was eating. Of course, I ended up eating a lot of junk over these days, too. Taquitos one night, a milk shake on another, etc. Blah, right? Oh well. Trying to get back on track! If you're looking for something vegetarian and delicious, you can do the follow the exact same recipe for the honey-curry chicken I told you about, only replace the chicken with chick peas and potatoes. Then there's also salads - boring, but if you know how to make a simple but delicious dressing, then you're good to go, my friend. A really simple salad I like to make just consists of whatever lettuce I can find (but I prefer romaine), a liberal sprinkling of unsalted sunflower seeds, and a dressing that's nothing more than a splash of olive oil, balsamic vinegar, salt, pepper, and a drop or two of honey whisked together. Simple, but very satisfying.
