Even though my OTP is Angel/Buffy, I definitely love souless!Spike more than souless!Angel. Spike is an asshole, but Angelus is a bastard who just loves delivering pain. I honestly can't remember seasons 4-7 that well so I'm not sure if I ship Buffy/Spike. XD Obviously need to full rewatch ASAP!
I liked Dawn at first (maybe 'cause I was younger?), but from the few episodes I've rewatched sporadically she did come off at annoying. >.>
I always thought Willow was bi. Or, you know, just loved who she loved ('cause I don't think I even knew what bisexual was when I first watched the show in my early teens). She loved Xander, she loved Oz, and she loved Tara. Kennedy...yeah. Didn't buy it. I want Oz back. XD
Spike, Oz, Anya and maybe ... Jonathan or Andrew ... should have all gone on a long road trip together. I think I would have enjoyed that as a spinoff XD

It started out all "Vampires are 100% evil all the time" and souled vs. non souled are totally separate, then got more and more gray over time, which made the show more interesting, but made the first season or two a bit off. Have you watched Angel yet? It's pretty great too, and made me like the character of Angel more.
I think Anya was my favorite character ANYAAAAA. I freaking adore Anya. <3 I especially love how the character and acting choices evolved so much from when she was first introduced.
My issue with Buffy/Angel is the same as my issue with Elena/Stefan I agree with you 100% now, but in it's defense let me just say that when Season 2 was airing and I was 15 Buffy/Angel was incredibly romantic and beautiful and the most perfect relationship ever. ...yeah.

I think Season's 1 and 5 are my favorite? The only thing I don't like is when Buffy crosses over (she only does a few times) because it's all ANGST! WOE! and I was way over their romance by the time I watched Angel.
