I've joined the Netflix cult. And I guess that means "the Netflix and not Qwikster cult," because it was about two days after I started my free trial that the split took place. I just showed a friend how to make an enchilada casserole tonight. What is awesome about casseroles... is the serious amounts of leftovers. I think I have enough for the rest of the week, AND, perhaps a weeks worth in the freezer.

I agree with you for what it's worth, but I think you're ahead of me, there. I try hard to make a recipe that "serves 4" last for four meals. Sometimes I manage. Sometimes I don't. I'm at a point now where I'm thinking the thing to do is substitute "chicken breast" with "turkey thigh."
