I absolutely LOVE to cook, but simply didn't have time this year to plan an elaborate menu. So I am expending my creativity in small ways, by keeping the rest of it simple. Tim and I are having a potluck that just keeps GROWING over at our place, and this is what we're supplying

A million times YES. That is the only way to go. I also totally agree with you re: tofu trying to be like meat. WRONG.

We had a tofurkey one year. Then we were very, very thankful for all the non-tofurkey foods available.

I've never understood the need for tofu to taste like meat. You could just do Thanksgiving the way my family did it growing up (my grandparents were strict vegetarians) with massive amounts of Indian food...

I have to eat my own cooking and work today. Boo...
