"Love is like a friendship caught on fire. In the
beginning a flame, very pretty, often hot and fierce, but still only
light and flickering. As love grows older, our hearts mature and our
love becomes as coals, Deep-burning and unquenchable." - Bruce Lee

Why can't it be hot and fierce forever? Or at least until there is no "burnable wood" left?

Maybe it just gets exhausting.

It's interesting that you take the quote as something sad.

First love is a bit insane and very heady, and I don't think the love lessens, rather it intensifies and becomes deeper.

It describes the flame slowly cooling to just this faint glow from its former glory, someone in love, I'm sure, wants to see something eternal but I see something that is dying. I'd have to be quite old and tired to be ready for the dying of passionate things in my life.

"Deep-burning and unquenchable" - That's what bolsters my opinion.

I agree, that is what he meant. But it breaks the metaphor, fire isn't eternal not even at the altar of Hestia. When it gets down to the coals that means it's weakening and dying. It's not the statement itself that is inherently sad, but that was my first reaction to it; especially knowing that Bruce died early and the only immortal love he left is the memory of him.
