Recipe: Fungus, Kale, and Cow Shavings

Well, it IS.

But judging by the reaction we all had to it, it could also be called "Hamburger Help-me-kill-the-others-so-we-can-take-their-portion". At least, it could be if it used hamburger. Which it doesn't.

Okay, so it PROBABLY needs a better name*. Suggestions welcome in the comments.

I luv the name!!! Luv the spice!!!
(But I don't think I could eat the pressed beef product...;)
Any ideas for a replacement?

Well, if your objection is to the fact that it's inhumanely raised, unhealthy, heavily processed, and overpackaged factory meat, you could take a small locally-raised pasture-fed roast and thinly slice it yourself. Putting it in the freezer for a bit can make it easier to slice neatly.

If your objection is to beef in general, then thinly sliced pork would work, if you add a small splash of soy sauce to aid the browning. Broiled or grilled salmon would be GREAT. Or small cubes of lamb, tandoori-style: marinated in yogurt, cumin, cinnamon, cloves, cardamom, and garlic, and grilled or broiled until nicely browned... That would be the way to do chicken for this dish, too.

If your objection is to meat in general, then ideally, pan-seared paneer cubes (OMG YUM). That makes this more like a traditional palak paneer.

If you're avoiding dairy, too, then you could try marinated pan-fried tempeh? I haven't worked with tempeh very much.

(But really, I'll eat a bowl of the greens-n-shrooms on its own. Yum yum yum.)

HaaaHaaafunny!!! All your listed objection are much more noble than my own. Pressed beef just gives me the willies. Its a texture thing.

Tempeh sounds very interesting. Thanks
