So I finally got around to making my sweet potato shepherd's pie! It was FANTASTIC!!! Matt even said it was the 'best pie ever'! :D

You mustn't speak of the sweet sweet potato in such a way!!! lol

I really, really adore sweet potato. Every week we do a big roast and sweet potato is my favourite vegetable... with pumpkin a close second. But on shepherds pie it was such a delicious contrast to the yummy pie mince I made (which included some minced up sun dried tomatoes in the sauce... YUM!)

haha they do come in funny shapes though! You could stick googly eyes on them and give them names! hahah :P

Aww yeah we did try parsnip and it was nice but not as nice as sweet potato!! :D

Normally now we just do regular potato, sweet potato, pumpkin, carrots, onion and garlic. Roasted garlic is YUM!!! But oh so stinky if you have too much.

i've never liked shephard's pie because i hate mashed potato and mince, but this looks good because i looooove sweet potato a whole lot more than normal potato. for the mince i could always make it... unmincy i suppose!

You could make it with chicken inside instead of mince. :D A few people asked for the recipe but I don't have it written down cause I just made it up as I went so I'm gonna make it again (and write down the recipe) and then I'll post the recipe. Then I guess you could just make a chicken variation. :D

Nah I don't much like mushrooms.

OMG I really want to try sweet potato fries! I keep hearing about them but I've never had them! I will have to make some!!!
