I have very little counter space also, even though I have a large kitchen. It precludes my leaving out appliances that I use every day, like the blender. I just store it in a cabinet above the outlet I use and haul it out every day. I stack flat-topped appliances ( the toaster oven sits on top of the microwave). I guess when they built this house, people didn't have an array of appliances, so they saw no need for extra counter space. I do have a sideboard that helps with more counter space (we pulled it out of a dumpster, and wine crates fit perfectly on the shelves underneath it, making ersatz drawers. The Universe really outdid itself with this one!)
the sideboard sounds cool. my kitchen back in brooklyn was like that, quite large for a nyc apartment, with absolutely no storage - not a single drawer in the entire kitchen - and poorly laid out to boot, lol
