Day 3: Cilantro Detox

Day 3: Cilantro Detox Smoothie
½ cup fresh or frozen pineapple (no cans)
2 celery ribs
1 cup green leaf lettuce
⅓ bunch fresh cilantro (also known as coriander leaf)
1-inch piece of ginger root (or size to your liking)
1-2 cups of coconut water or water (start with less)

this was a delicious smoothie.  i love the pineapple ones because they tend to be such a pretty shade of green.  when i took the lid off of this one, it smelled fantastic.  well, i love cilantro, and i love ginger, and i love pineapple.  this smoothie tasted very green, in a good way.  light and not overly sweet - just enough pineapple to make it pleasant.  as i've mentioned before, the celery does make for a thicker texture.  i wonder whether with a vitamix it would get more pulverized.  but i don't find it unpleasant.  i really liked this smoothie and i suspect i will make it again.

oh, btw, they messed up and forgot to put green leaf lettuce on the shopping list for this week, so i substituted romaine for that, as i always have romaine on hand, it being my favorite type of lettuce.  :D

other than that, i finished the last few pages of editing project #1 and then did the longer of the two stories i had in my inbox for project #2.  the next story i will do in small bursts after work this week - i figure two evenings should do it.  by then i suspect there will be another in my inbox.  i'm a bit concerned about getting everything done - there's just over a week now before luvsev arrives, and i've done nothing with the apartment to speak of.  *sigh*  plus, i'm working this saturday so that i can take a day off when she's here w/o forfeiting the pay.  sometimes it sucks not getting any vacation time.  oh well.  all i can do is  what i can do.

tonight i decided to make kale pasta salad with olives, sundried tomatoes, and feta cheese.  when i googled pasta salad with kale, this is the recipe that came up first:  exactly what i wanted, lol.  it's pretty tasty. (i did not use the dressing from this recipe as i already have homemade italian dressing in the fridge.)  and i had chocolate chia seed pudding for dessert.  i feel very domestic, lol.
