Potato (parsnip/carrot) Curry

I took some liberties with some of the ingredients, or perhaps I should say, modifications.  I don't care for potatos, the main ingredient in this curry, so I substituted other roots - parsnips and carrots.  Cumin seeds and fenugreek seeds are used for for intense and roasted flavor, but I was stuck with powder versions and added those just before ( Read more... )

yes please, instructions! I think it might work if you sub soy milk, or other milks instead of the yogurt. I am not sure what I would use instead of ghee...maybe olive oil?!

You don't need any dairy for this dish, I added it on whim, but you can add soy versions if you like. And as for ghee, you can clarify vegan butter if you want (cook it down and then skim fat off fat that floats to the top) or you can just use the vegan butter, or olive oil. Ghee is traditional, but can be easily substituted. I will put up the recipe soon.
