Adele Davis wrote about this in the '60s- raw carrots don't give up their nutrients as they pass through the system. Cooking makes the nutrients available, but degrades them somewhat. Juice is best because the cellulose has been pulverized.
Cooking them whole makes a lot of sense, I'll try that. Uncut and juicy always works for me.
