Hey i'm glad you both are getting involved in this kind of experience. I went to Peru few years ago in a student/turist way but I think I could help you and give you some advise anyways, and also help you with your Spanish.
I can't believe I didn't think of that before! We could get together and speak spanish to get me ready! I think I'm going to try for Spanish class in the winter semester...

If you are looking for other possiblities for working/helping out while you are down there, I looked into a restaurant/hostel in Peru that also runs a language school for local children and a huge number of other "let's do what we can to help the locals" projects. If you are remotely interested I could dig up the website for you.
I could also send you some really amazing Learn Spanish discs (which I will not mention by name, seeing as how they are not ...official... copies) but they have done wonders for my Spanish in preparation for my return to Uruguay and Argentina this winter.
