Oil and you

I think oil is one of the first foundations you add to any food.  You use it for grilling, baking, frying, etc.  Because of this, I have decided to give everyone a crash course in oil usage.  Hopefully, after this, you will think twice before you pour in that bottle of oil you have.

I like groundnut oil, but I always worry about cooking with it when you're eating. An informative post! That guy looks like he needs to watch all his portions, not just the seasame oil ones...

I use canola oil for cooking and extra virgin olive oil and sesame seed oil for dressing. The only time that I heat up sesame seed oil is when I make my sauce for Chinese cold noodle. But even for that I don't heat it up so much that it goes bubbly. In my opinion, it loses its flavor and aroma when it's heated up too much; it tastes more like burned food when it's too hot. (Similar with soy sauce, not soy oil, which I've never tried.) It flavor is best when it's used right out of its bottle. But too much of it, like too much of anything, ruins the food and its taste. I've never used peanut oil. But my brother uses it to fry chickens.

As for those cooking shows on Food Network, I think Rachael Ray's cooking looks much more appetizing than Emeril's, even though she can drive Paula Deen up the wall. Can you believe that Emeril's restaurant in New Orleans has a waiting list of 3-4 months long?

a few drops of sesame seed oil is okay for me but anything more than that I really hate

I think bobby uses a lot of it too. I think the only one that can get away with using a lot of it is Paula. Reachel doesn't seem to use a lot of it nor does Giada. But Bobby and Emeril use it like it's water.

I use extra virgin olive for steaks bc of high smoke point :[~

otherwise, i use whatever Alton Brown tells me too @_@
