Grinding whole wheat flour somewhat finer than normal does not make it appropriate for pastries, as the labeling on this bag of flour loudly proclaims.

This is the reason no one believes you when you say things taste good.

Yah, you need to add extra gluten to whole wheat flour, at least for bread, but I think I used xantham gum instead last time I did it. But I know nothing about baking and I don't know if that will work for pastries or not. Damn hippies!

Whole wheat flour is fine for breads. The bread just ends up more dense and dry and a little less sweet. The whole wheat pastry flour is also fine for certain kinds of pie crusts. My problem was that the flour was just gritty instead of fluffy and nice.
