This past week we were given advanced sausage making basics at the shop. The "advanced" bit included thoughts on equipment, costs, and strategies around large scale production. "Basics" focused a little more on crafting recipes, techniques to use, choice of meats, and just how f&cking simple it is to make sausage. I agree, but only to an extent ( Read more... )

Both! Well mostly the sausages. I'm sorry that the meeting with Zimmern won't be to deliver him a swift kick in the junk. He desperately needs that.

Random thought on sausages? While you don't have as much control over your grind, you can mix up sausage meat by getting the ground meat of choice, adding flavors, and letting it sit for 24 hours or so. No need to stuff it into casings... just form patties or form it around skewers. Easy as pie.
