Evans's. Always use the possessive S. Leaving it off is a slippery slope to madness, experts say. I agree.

I was taught to leave the possessive S off words ending in S, Z, and X. It's pretty much like the Oxford comma or the use of 'alright' - half the people you ask will be for it and half will be against it. I say go with which one feels correct to you.

This is what I was taught, too. If the word ends in an ess sound, leave off the s after the possessive apostrophe.
