Cream cheese icing is awesome. You can also melt unsweetened chocolate and stir it in for a wonderful chocolate icing.

Actually, the frosting that used to get me marriage proposals involved that, plus Kahlua.

Ooh, I hadn't thought of that.

I've become quite a fan of things involving cream cheese, I must admit. It always turns out so well. The caramelized frosting I did for the apple cake was kind of meh. Too sweet for me. (Though with a little less sugar I bet it would make a decent maple bar. That may be for the donut experiments.)

Also, Philadelphia cream cheese sometimes has a recipe for a cream cheese fudge inside the box, and that's what I grew up with as the Proper Fudge to be made at Christmastime. It's essentially chocolate cream cheese icing made with less milk, so it's stiffer. (It's another thing that's good with booze -- whisky fudge is especially good.)

I am glad to have begun your initiation into the love of cream cheese -- it's excellent stuff!

Hm. My cream cheese frostings actually don't involve milk on a usual basis (though one does to thin it out a bit as I recall).

That also sounds tasty.

I haven't added any alcohol to my baking since I lived in Portland (and was making my brownies from a box).
