Erm, could have her describe the concept maybe? "I'm not attracted to men." /"I'm only attracted to women." I completely agree with you that the Old Republic seems unlikely to have a single word for the concept, except possibly a derogatory slang one that definitely hasn't been reclaimed by some militant queer community.
I would also suggest a way around it ("not attracted to men"), or you could go the Firefly route and invent a word that is in use in the Kathak corner of the universe. (I'm still fond of the word "sly", for some reason...)
Going along w/skinship's line of thought, you could have Juhani say that she's just attracted to women and have Dak exclaim 'you're[insert improv'd Kotor word for gay]?!'
