It's so good to see a post from you, and brilliant to hear that your writing fire is stoked!!! *dances happily* I have not even SEEN Encanto, but I look forward to reading your fic once I do!
I too fell into a fandom recently that has me writing up a storm. It's a Chinese drama called Guardian - appealing characters, messy plot, promising but incomplete worldbuilding, glimpses of steampunk--can't imagine why it grabbed me so hard. ;-)

It was really so completely unexpected, I haven't cared about a Disney movie since the 90s but this thing rolled up with magic and family drama and fun worldbuilding to pick apart and build off and a curly-haired middle aged man I could make gay and that was that XD
