I originally thought it was the science of nutrition, heavy on chemisrtry and biology. Instead it was far more "soft" and even new age than I had expected, with much more on counseling and psychology.
So I have been learning about the science of nutrition from my reading, and supplementing my learning with the info provided oin the lectures and online. It is now a mix of the two.
But this startup will have me learning a LOT about the science of nutrition-it is clear already that I'll face a steep learning curve.
In Britain there's lots of courses set up that provide 'Diplomas' in Nutrition, 'qualifying' people to call themselves 'Nutritionists', which they do. They use this title to act as nutrition councelors, primarily telling the worried well that they have wheat allergies and should spend large amounts on supplements that have little evidence to support their efficacy and frequently contain compounds readily available from foods. I'm sure the courses do contain much valuable information, but they're very prescriptive, and less about understanding mechanisms underlying what's going on.
I have worked in the more mainstream end of nutrition research for many years, where attitudes to such courses are a little disdainful (I think some of this is fueled by a sort of jealousy). I see them as having a value; but not as great as those that sell them suggest.

It is very Beaux-Arts thhere, just like a lot of DC architecture, so you are right, it could be in DC.
