ha ha ha. i think it is from the agave cactus...like some tequilas. (maybe all teguilas, but the shitty ones are diluted where 'patron' and stuff is all about saying "100% pure agave" or something. i dont know for sure and it is too early in the morning to wiki shit).
but anyway, it is awesome stuff. doesnt affect your blood sugar levels as much (if at all, dont remember) the way sugar does. it is lighter and sweeter. an excellent sugar substitute for cooking or in teas, etc. also good for replacing honey (as most vegans dont eat honey. not sure how i sit on that issue, but bernard doesnt eat it so when i bake i cant use it).
anyway. i thought this was funny since organic/healthy 'nuts'/vegans love the agave and and bernard and i jokingly call each other "agave" instead of "honey" since honey isnt vegan. i know, lame.
